When it comes to food, friends, family and festivities, nobody does it like the Cajuns. And for holiday celebrations, there is one place in Tulsa to find this passion for good food and zest for life. That’s Hebert’s Specialty Meats at 2101 E. 71st St.

A big Cajun favorite for the holidays is the turducken. Hebert’s offers four varieties of this classic mealtime centerpiece. Along with the traditional turducken, Hebert’s now offers a pork-free turducken with chicken sausage, another with chicken jalepeno sausage, and a special “turken” that has two chickens, a turkey and no duck. For those who aren’t familiar with this Cajun delight, turducken is a deboned turkey, stuffed with a deboned duck, stuffed with a deboned chicken. All crevices are filled with pork sausage stuffing and cornbread dressing. The rich flavor of turducken far surpasses traditional turkey, and there is no dry meat.

Hebert’s owner Ed “Cajun Ed” Richard explains what makes Hebert’s authentic Cajun food so special: all the meat and seasonings come from Louisiana. The meat is fresh and the best of the best. Hebert’s is proud to be one of only two facilities in Tulsa to have its own USDA inspection mark, with a USDA inspector’s office on site.

“The timely combination of cooking and seasonings creates the authentic Cajun flavor, which was previously found only in South Louisiana,” says Cajun Ed. These wonderful seasonings are all available in the largest Cajun retail space in Tulsa. Brand name items include Tabasco, Zapp’s Potato Chips, Café Du Monde Beignet Mix, Camellia Beans, Community Coffee, Zatarain’s, Jack Miller’s BBQ sauce, Tony Chachere’s, Steen’s 100% Pure Cane Syrup and Blue Plate Mayonnaise.

Hebert’s also carries pralines, gift cards and online gift certificates, music, and lots of Louisiana cookbooks that range from general to specific Cajun cooking. There are also gift boxes for steaks, chops or whatever meat you want to present. Keep this in mind for a hostess gift that is sure to be welcomed.

Besides turducken, deboned chickens, prime beef tenderloins, duck and boneless turkey are popular choices for the holidays. Also available are boneless turkey breast stuffed with turducken sausage and three varieties of ham. Hebert’s offers spiral-sliced ham, honey-glazed ham and Cajun honey-glazed ham. Side dish favorites include broccoli cheese casserole, green beans with new potatoes and bacon, corn maque choux and sweet potato casserole. Enjoy Hebert’s authentic Cajun food any way that suits you – fully prepared or all the fixins’ to do it yourself. Eat in, take out or buy frozen ready-to-cook items to take home or have shipped. Hebert’s will even cater your holiday party at your home or office.

To top it all off, choose from Hebert’s made-from-scratch desserts – bread pudding, bourbon pecan pie, key lime pie, chocolate ganache peanut butter pie, homemade praline with cream, gator mud or crawfish in a hole. Cajun Ed has enjoyed all of them and says, “Each one is a treat that can’t be matched anyplace else!”

Lunch and dinner are served Monday through Saturday at Hebert’s. Daily lunch specials include red beans and rice, Cajun Mex tacos, turducken and Cajun chicken wings over jambalaya. Hebert’s Specialty Meats, home of the world-famous turducken and deboned poultry, is open Monday through Saturday from 10 a.m. until dinner is served. Look for the big red house with the rocking chairs on the front porch just west of 71st and Lewis. Don’t wait to place your holiday order for meats, side dishes and desserts.
