Have you ever wondered, “What exactly is ‘Tex-Mex’ food?”  Most people guess that it is a combination of southwest-style Texas dishes and traditional Mexican cuisine.

However, Bambi Fritz, owner of Andales Tex-Mex Cantina in Tulsa, has a more succinct and descriptive classification:  “Tex-Mex is full of flavor.  The flavor comes through the food itself, and not just through the condiments that can be added.  It is a very special way of creating delicious dishes.”

Andales presents an abundant menu with recipes that have been passed on through several generations, which originated in the early 1900s and were introduced to America during the Mexican Revolutionary War. Every appetizer, entrée, side dish and dessert is created fresh for each diner. Even the three salsas to choose from are homemade. Kids meals include an entrée, side and drink; grilled cheese quesadillas and peanut butter and jelly burritos have already proven popular with the little ones.

Attention to detail is also demonstrated in the Andales “Bikini Menu,” meal choices that contain less calories and less fat but are every bit as flavorful as the regular menu.

“All of the guests I speak to always comment that there is no other restaurant in town like Andales,” says Joshua Snead, managing partner. “It is gratifying to witness customers who are obviously enjoying their food and the service they receive.”

While the food is the main draw – from favorites such as burritos, tacos and fajitas to lesser known dishes such as the slow-cooked, exceptionally tender pork dish Carnitas – the service and atmosphere at Andales is a definite perk.  Everyone from the owner to staff is  hands-on, and a great premium is placed upon personalized service.  The restaurant itself is comfortable, clean and contemporary, and large groups can be accommodated.  There is also a patio area that has the capacity to seat anywhere from 40 to 60 diners.

Delicious food tends to demand delicious drinks, and Andales provides a wide variety of beverages, both non-alcoholic and spirits. Ten flavors of margaritas and daiquiris are on tap, with the option to “create your own.” Also available are imported and domestic beers. 

Catering is another service that Andales provides.  “We can handle anything from a basic customer pick-up to providing staff who set up and serve,” says Snead. “How far in advance to place catering orders depends upon the catering job needs. It is best to give as much notice as possible, but we are great at accommodating, and in cases without servers needing to be present, a 24-hour notice is more than adequate.”   

Yet another plus – Andales offers take-out containers specifically designed to keep meals hot on the way home!
